Lacoste Cake?!

Yes… It's a Lacoste Cake… A colleague of mine is obsessed with Lacoste… He even had a Lacoste themed birthday party… Dressed top to bottom with Lacoste apparels!
EJ (birthday boy) specifically requested the alligator to be on the cake… Since its a cream cheese frosting, i avoid using fondant or gumpaste to avoid them from melting… so i had to pipe the gator and words down… thank goodness the gator didn't look like a dinosaur..! Phew! There you go birthday boy… your Lacoste Cake… :)

Interesting fact:
Here's what I've learned when attempting this cake… i honestly thought the brand CROCODILE and LACOSTE is the SAME thing … BUT ITS NOTTTT…(felt kinda silly there)
Crocodile has a CROCODILE facing LEFT with its jaws CLOSED whereas Lacoste has an ALLIGATOR facing RIGHT with its jaws OPENED!

I wonder what brand I'll be requested to do next?! hahah… ;p

Big CupCake Small Cupcakes for Wedding Cupcake Tree

Here's a simple yet elegant request from sweet Rina Suriana (the bride). Specifically requesting grey and coral colors for the sugar butterflies and sugar flowers. So you see… we don't need so many cupcakes for a cupcake tree! One big one and a couple dozen of smaller ones would be enough for a picture perfect Wedding Cake! This is great when you're not planning to feed all your guests with your wedding cake.. and it saves you more money too!

Anyways, Congrats to the newly married couple! May Allah bless you marriage with love and happiness till Jannah!

PS: Special thanks to Sweet Farrah! for the recommendation!

Here are more pics of the Wedding Cupcake Tree…

Nutella Blossoms (Steamed Coconut Cake with Nutella Filing)

Here's another dessert craze that has not died down yet, popular amongst the Malay community here in Singapore. Polka Dot Nutella Blossoms we call them… in other words - Steamed Coconut Cake with the Nutella Chocolate spread filling.

Thanks to our dear friends Irman and Shikin whom requested them for their new-born daughter's (Baby Alya) Baby Shower Ceremony yesterday.

We're crazy about presentation so we decided that it goes with polkadot ribbons as well wrapped around the gift box to have a simple yet cute and elegant touch to it!

Here are some pics!

Here's another with various designs made for the hubby!

Old Golden Floral Red Velvet Wedding Cake for Hairul & Syalha

Hairul is the reason I found work in Fika. He introduced me back then in 2011, to join the kitchen part time even though I didn't have any commercial kitchen experience whatsoever. 8 months later i became full time and have been baking for Fika full time ever since! Thanks Hairul!

The great news of his wedding came last month with a request of a wedding cake meant to be as a gift to his bride, sweet Syalha. I couldn't refuse and had planned it as a gift to him. He wanted something gold and with the initials "H" and "S" and the rest was up to my imagination! I love it when I get orders where I could do whatever i want with little requests really! It gives me an opportunity to allow my creativity to shine!

And so I decided a some what "White Picket Fence" theme, only instead of white it will be GOLD.

A 2-Tier Red Velvet Cake with Cream Cheese Icing. The fence is made of white chocolate sticks dusted with an old gold dust and added with some hand made sugar petunias that i have made out of gum paste.

Here's a picture at their wedding we attended!! Together with some Fikaians!
Congratulations Hairul & Syalha! May Allah bless your marriage with endless Love, Joy and Happiness!

The Goodness of Tea!

My husband and i have recently become tea people! and we love it! We have learnt much on the benefits of drinking tea too. It started out when i though of cutting down on my caffeine intake. I was a coffee addict see… at least 4-5 cups a day! decaffeinated coffee somewhat tastes weird for me… no idea why… so tea it is… and before you know it… we're hooked on all sorts of tea leafs… we were fascinated by all sorts of benefits that each different tea leafs could actually provide for our body! The more we know… the more we wanted them.

So here's what we got so far…  And a short write up on its benefits!

Top Left : Bed of Roses (caffeine-free)
  - Pink rose buds are believed to improve circulation and heart health. It is also said to relieve menstrual pain, as well as fix stomach bloatedness and help balancing hormones, improves complexion and reducing wrinkle formation. Drinking pink rose tea regularly is said to help you keep young and beautiful.

Top Right : Chamomile (caffeine-free)
  - I found 8 amazing benefits of chamomile tea! Treats Cuts and Wounds, Helps with Diabetes, they are a form of Antibacterial, Calms Muscle Spasms, Soothes Stomach Ache, Promotes Sleep, promotes Healthy Skin and Help Reduces Cancer Cells! Amazing no?!

Centre Left : Jasmine Green Tea (mild caffeine)
- Loaded with Antioxidants are good for your body and allow your immune system to flourish and stay strong, Reduces Cholesterol and helps in Weight Loss! Fights Bacteria and Regulate Circulation!

Centre Right : Blissful Berries Mix (caffeine-free)
- This mix contains apple, blackberry, sweet blackberry leaves, rosehip shells, blueberry, hibiscus, elderberry, strawberry pieces, blueberry and raspberry. Bursting with refreshing flavors! A powerhouse of high fibre and vitamin C and pact with Antioxidants! Reduces and prevents cancer cells! Also contains iron, calcium, reduces dental plague and bladder cancer… the list goes on for this one!

Bottom Left : Peppermint (caffeine-free)
  - Peppermint tea actually treats irritable bowel syndrome! They improve digestion and reduces heartburn too. Clears congestion and cough related to colds and allergies, controls mild asthma and fights stress!

Bottom Right : Anti-Stress Mix (caffeine-free) my favorite!
- This mix contains chamomile, organic lemongrass, lemon balm, fennel, rooibos, honey bush, ginseng root valley road. All i can say is this one keeps me calm, sound and feeling totally relaxed!

Where to get these goodies!?
There are many different brands out there and i'm sure are as great too. But these ones that i got are from The 1872 Clipper Tea Co. Unlike other brands i know, they are not over-priced and worth the money for really good quality tasting tea! There's an outlet at Tangs (Orchard Rd) basement. Prices ranges from $18-$25 per bag of 80gm. A bag of leaves could probably make you about 30-40 cups! So i say go for it! and be tea people for a better health!

Wedding Cupcake Tree for Harun & Farah

The best option for a wedding cake when requested at the last minute to me is a cupcake tree! Harun had requested for a wedding cake just less than a week before his wedding… (wedding on 8th September) and on the same day i was already booked for a dessert buffet for another… but i can never find myself refusing a request… so i suggested a cupcake tree! and thankfully he agreed… i was so glad!

I love cupcake tree! there's so much you can do with cupcake trees… from colors to decors and height too! So the groom and bride-to-be wanted red velvet and something white & silver… and at a short period of time i manage to get some great silver beaded accessories for the tiers, some white flowers, edible silver beads for the icing and silver cupcake cases  to make the sweet wedding cupcake tree for the sweet loving couple. So much fun with this one! I hope to get more cupcake tree requests!

Congrats to the beautiful couple!

When you start to think of buffet table… you mind starts to pour all the goodies that you can think of onto a table.. and that's exactly what i did… from muffins to macaroons, cookies to brownies… the list goes on… sounds like hard work… but with good time management and the love for baking… nothing is impossible…

Homemade Caramel Sauce

A couple of days ago, i was posting about Caramel Apples, and here’s the Homemade Caramel Sauce Recipe that i promised!

1 cup of brown sugar
1 tbs of butter
300 ml of whipping cream

That’s it! 3 simple items to make the world a sweeter place!

Here’s how you do it…
Place the brown sugar and butter in a small sauce pan over medium heat and let it all melt. Then pour in the cream and stir till it thickens. Try not to let it boil (meaning avoid seeing bubbles). If you prefer a more watery like caramel sauce… you can add in more cream. for a more thicker and sweeter caramel sauce.. you might wanna add in more brown sugar!

Pour them into a jar and you can keep them refrigerated to about 1-2 weeks!

Caramel Sauce goes great together with Apples and even your favorite cake!

Caramel Apples

When i thought of eating apples… I never like to eat them just like that… it has to come with a little extra something… something sweet! Whenever i go to the supermarket and see a big juicy Fuji apples… i can’t think of any other way of eating except for with Caramel Sauce! Fuji apples are best for that nice crunch!

It has always been my favorite stay-home treat with a simple Caramel Sauce that you can easily do at home! Kids will love it too! Look out for that Caramel Sauce recipe that i’ll be posting soon!

Tips: Some would have the apples with the skin on… i’d prefer the skin peeled! Sometimes apples have wax on them and you never know what chemicals are used in those apple farms to keep away pests.. so It’s best to have them peeled to avoid those harmful chemicals! However research says apple peels are full of anti-oxidants and such… so if you want those peels be sure to wash those apple thoroughly before consumption!
